A Lebanese favorite, it's orange blossom ice cream. But you might as well use the original Lebanese name - it's more exotic. It helps if you can get the right ingredients. Ingredients:
3 3/4 c milk |
1 1/4 c cream |
1 1/4 c sugar |
1 tsp sahlab (similar to corn starch) |
1/4 tsp mustikah (pine tree resin) |
1 tbsp orange blossom water |
chopped pistachios |
Directions:
1. Dissolve sahlab in a small bit of milk. 2. Pour remaining milk in a saucepan with cream and sugar, and bring to a soft boil. 3. Add the milk and sahlab to the boiled milk, stirring occasionally. 4. Grind mustikah with 1 Tbsp sugar with a mortar and pestle into a fine powder. Stir into the milk. 5. Simmer over low heat for 15 minutes, stirring occasionally. 6. Add orange blossom water, and remove from heat. 7. Beat well with a spoon. 8. Pour into a bowl and cover with foil. Freeze. 9. Scrape the bowl down three or four times while freezing, mixing in the frozen crystals. 10. Once evenly frozen, transfer to the refrigerator for 20 minutes before serving. |
