12 -14 crumbled graham cracker squares |
1/4 cup melted butter |
12 ounces cream cheese |
2 eggs, beaten |
1/4 cup sugar |
2 teaspoons vanilla |
1 teaspoon lemon juice |
1 teaspoon grated lemon rind |
1 cup sour cream |
3 1/2 tablespoons sugar |
1 teaspoon vanilla |
Directions:
1. For crust: 2. Mix graham cracker crumbs and butter, pat into 9 inch pie pan and chill or freeze til firm. 3. For cheesecake:. 4. Preheat oven to 325°F. 5. Combine cheesecake ingredients; beat until light. 6. Pour into graham cracker crust. 7. Bake 25-30 minutes, remove from oven, cool 5 minutes. Do not turn off oven heat. 8. Topping:. 9. Blend topping ingredients, pour over pie. 10. Bake 10 more minutes. 11. Remove from oven. 12. Chill 5 hours or longer. |
