From The Nova Scotia Inns and Restaurants Cookbook, Breads and Muffins section, this recipe is from the Inverary Inn. Nice at breakfast time! Ingredients:
4 cups flour |
8 teaspoons baking powder |
2 teaspoons salt |
1/2 cup white sugar |
1/2 cup shortening |
1/2 cup currants |
1 1/2 cups milk |
Directions:
1. Combine flour, baking powder, salt and sugar. Work in shortening as for pastry. 2. Add currants. 3. Moisten with milk, making a soft dough. Knead 10 seconds. 4. Pat out on a greased cookie sheet, to a thickness of a 1/2 inch. 5. Preheat oven to 375°F and bake for 25 minutes. 6. Serve warm with butter. |
