Bon Appetit Over The Top Taboli Salad |

This is a very hearty bulgar wheat salad, garlicy, lemony, with green onions dill, parsley, cucumbers. Found this recipe in Bon Appetit several years ago. I call it Over the Top Taboli . I love it for lunch! Ingredients:
2 cups fresh lemon juice |
1-1/3 extra-virgin olive oil |
1/4 cup minced garlic (yes, 1/4 cup!) |
2 teaspoons salt |
2 cups bulgar (cracked wheat, cracked soft-white bulgur wheat) |
note: i like steakhouse produce, taboli wheat from bristow, oklahoma, and it comes in a full pound package, but you may not be able to get it, so a pound comparable to this will be fine. |
6 medium cucumbers, (about 4 lbs), peeled seeded, chopped |
4 cups chopped fresh parsley |
3-1/2 cups chopped green onions |
3 cups chopped red bell pepper |
1 cup chopped fresh dill |
2/3 cup fresh mint |
Directions:
1. Whisk lemon juice, olive oil, garlic, and salt in a very large bowl to blend 2. Season dressing to taste with pepper 3. Mix in bulgar 4. Mix remaining ingredients in medium bowl 5. Season with salt and pepper 6. SPOON ATOP BULGAR, (DO NOT MIX) 7. Cover and chill overnight or up to 2 days 8. Toss salad 9. Transfer to serving bowl or bowls 10. This is truly low calorie and very nutritious + DELICIOUS! 11. NOTE: there are no tomatoes in this recipe, but you could add as 12. you go :) |
