BOLOGNA WRAPPED ASPARAGUS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Martinez Estate in Mansfield, Texas in 1994. Ingredients:
10 asparagus spears |
2 tablespoons spicy mustard |
1 tablespoon mayonnaise |
10 large slices bologna |
Directions:
1. Trim bottom end of asparagus and blanch with boiling water. 2. Blend mustard and mayonnaise in a small bowl. 3. Divide and spread mustard mixture evenly on large bologna slices. 4. Wrap one asparagus spear in each bologna slice. 5. Place slices in a single layer on a round microwave platter or plate. 6. Cover lightly with paper towels. Then cook 1 minute on medium. 7. Rotate plate after 30 seconds. |
