A bit healthier then the 365 Ways version. Can be frozen for up to 2 months. Ingredients:
2 red bell peppers |
1 1/2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips |
2 tbsp extra virgin olive oil |
2 large onions, chopped |
2 cloves garlic minced |
1 tsp red pepper flakes |
3 cups low fat chicken broth |
3/4 cup crunchy peanut butter |
10 oz frozen peas, thawed |
1/4 cup breadcrumbs |
Directions:
1. Roast the bell peppers, peel, and cut into 1/4 inch strips. 2. Season chicken with pepper. In a large frying pan, heat oil over medium heat. When just smoking, add chicken strips and saute for about 3 minutes, until chicken turns opaque. Remove chicken with a slotted spoon and set aside. 3. Add onions, bell peppers,and garlic to the pan. Saute 3 minutes, until onions are tender. Stir in hot pepper flakes. And broth and peanut butter. Simmer, stirring occasionally, for about 10 minutes. 4. Stir in chicken, peas and bread crumbs. Cook 5 to 10 minutes, stirring occasionally, until sauce is thickened and heated through. Serve over rice. |
