Bold Southwestern Chicken Salad Sandwiches |

This is super easy, and boldly flavorful, with lots of possible additions and modifications to make it a favorite for any palette. I used canned corn, and added additional cumin, cayenne, and chili powder for more flavor. This chicken salad is also good on crackers, or can be lightly warmed for a nice tortilla chip dip. Ingredients:
8 ounces chicken, cooked and shredded (pouched chicken works great too) |
1/2 cup light sour cream or 1/2 cup yogurt |
1/2 cup mayonnaise |
1 (1 1/4 ounce) packet taco seasoning |
4 tablespoons cilantro |
1/8 cup white onion |
1/4 cup celery |
1/8 cup corn |
cabbage, sliced |
Directions:
1. 1. Dice celery, onion, and cilantro. 2. 2. Blend all ingredients, except cabbage. 3. 3. Let sit over night to let the flavors meld together. 4. 4. Spread on lightly toasted bread, garnish with cabbage for crunch. |
