Yummy! This recipie was created by my sister-in-law. We love this when the weather is warm outside. Splenda or another sweetener can be substituted for the sugar in the recipie (diabetic friendly). The chicken can also be omitted for a vegetarian version. Ingredients:
1 bok choy |
1/4 cup scallion |
1 lb chicken, cooked and cubed or 1 lb canned chicken |
2 (3 ounce) packages ramen noodles, crushed, spice packs discarded |
1/4 cup slivered almonds |
1/4 cup sesame seeds |
1/4 cup butter |
1/2 cup olive oil |
1/2 cup red wine vinegar |
1 tablespoon soy sauce |
1/2 cup sugar |
Directions:
1. 1. Thinly slice scallions, Bok Choy leaves and stems. 2. 2. Melt butter in a frying pan, add slivered almonds and crushed ramen noodles. Brown ingredients, part way through, add sesame seeds and continue to brown. Approx 5 minutes. 3. 3. Mix oil, red wine vinegar, soy sauce and sugar. 4. 4. In a large bowl, combine all ingredients. Enjoy. |
