Bok Choy And Crimini Stir Fry |

A wonderfully fragrant and filling lunch that stands up on it's own (but don't let that stop you from enjoying it with sprouted brown rice!). Ingredients:
3 whole baby bok choy |
1 cup crimini mushrooms, sliced |
1/2 cup red onion, chopped |
1 tbsp soy sauce |
2 tsp sesame oil, divided |
1 tsp honey |
1 tsp red pepper flakes |
1 tsp fresh ginger, minced |
Directions:
1. Wash and quarter bok choy, reserving leafy tops. 2. Heat wok and 1 tsp sesame oil over medium-high heat. Add onions, mushrooms, and lower halves of bok choy. 3. Stir fry until veggies begin to turn a lovely golden color. Add leafy tops and stir until just wilted. 4. Combine remaining ingredients and add to wok. Stir to coat and cook an extra 1-2 minutes. 5. Enjoy! |
