The flavors are nutty and yeasty and completely habit forming. Good with tortilla chips or Fritos. Ingredients:
1 (30 ounce) can refried beans (pinto) |
1/3 cup corona beer |
3 tablespoons tequila |
2 teaspoons pureed canned chipotle chiles in adobo (to taste) |
2 cups shredded monterey jack cheese |
3 scallions, trimmed and thinly sliced |
Directions:
1. Combine beans, beer, tequila and chipotle puree in a medium nonstick pot. 2. Cook partially covered over medium heat, stirring often for about 5-10 minutes. 3. Stir in 1 and a half cups of cheese and 3/4 of the onions. 4. Transfer to serving bowl. 5. Top with remaining cheese and onions and serve. |
