In a 1930's cook book a mention on how southern cooks kept the slime off of okra. I tried it and man-oh-man! Tis good! Ingredients:
2 cups okra |
salt and pepper |
3/4 teaspoon lemon juice |
Directions:
1. Place okra in a sause pan and cover with water, and add lemon juice. 2. Add salt and pepper to taste. 3. Bring to boil. 4. Simmer for 8-10 minutes. 5. No longer! 6. The taste is great! 7. Not mushy, but not crisp at all. 8. I used the frozen, cut okra. 9. The lemon juice adds a wonderful kick to the taste. |
