A very simple cake, with very few ingredients, and quick clean up. Just my sort of baking. It's not too sweet either. Ingredients:
3/4 cup butter |
1 cup milk |
1/2 cup brown sugar, firmly packed |
1 cup chopped dates |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 teaspoon bicarbonate of soda |
2 eggs, lightly beaten |
2 1/4 cups self-raising flour, sifted |
Directions:
1. Combine butter, milk, sugar, dates and spices in a pan, stir over heat until butter is melted, bring to boil, remove from heat, stir in soda, stand 5 minutes. 2. Stir in lightly beaten eggs and sifted flour in two lots, mix well. 3. Pour mixture (it will be quite thick) into a well greased 20cm ring tin, bake in a moderate oven for 40 minutes. 4. Turn onto a wire rack to cool. 5. Serve buttered. |
