Delicious spices, Crasins and carrots blend together in the saucepot before being mixed into a hearty, whole grain batter. Low in both fat and sugar, high in fibre and delicious in taste! Ingredients:
2 cups grated carrots |
1/3 cup all-bran cereal |
1/3 cup packed brown sugar |
2 cups water |
1/2 cup crasins |
1 cup cake flour |
1 1/2 cups whole-wheat pastry flour |
3/4 cup splenda granular |
1/2 tsp cinnamon |
1/4 tsp nutmeg |
1/2 tsp ground ginger |
1/4 tsp salt |
1/2 tbsp baking powder |
2 tsp baking soda |
Directions:
1. Preheat oven to 350F, grease 24 muffin cups. 2. Combine carrots, All-Bran. brown sugar, water, and Craisins in a saucepan. 3. Simmer for 15 minutes and remove from heat. 4. Let stand, covered, 4 hours. 5. Whisk remaining ingredients together in a bowl. 6. Add the carrot mixture, stirring until just combined. 7. Bake 12 minutes, then cool in tins 10 minutes before un-moulding. |
