Body Flattering Oatmeal Raisin Cookies |

This is a low cal, low fat, big taste cookie! Ingredients:
2 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon kosher salt |
1/2 cup unsalted butter, softened |
1/2 cup applesauce |
1/2 cup sugar |
1/2 cup sugar twin |
1/2 cup dark brown sugar, firmly packed |
1/2 cup brown sugar twin |
1/2 cup egg white |
2 teaspoons vanilla |
1/4 teaspoon nutmeg |
1 teaspoon cinnamon |
3 cups oats |
1 1/2 cups raisins |
Directions:
1. Preheat oven to 350°. 2. Whisk together ingredients from group A; set aside. 3. Combine ingredients from Group B with a hand mixer on low. 4. To cream, increase speed to high and beat until fluffy and the color lightens. 5. Combine group A and Group B and mix until no flour is visible. 6. Now add the oats and raisins, Group C; stir to incorporate. 7. Fill a small cookie scoop with dough. 8. Drop 1 inch apart onto baking sheet sprayed with nonstick spray. 9. Bake 8 minutes (on center rack), until golden,. 10. Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool. |
