Bodacious Shrimp Jambalaya |

This is great especially if you like spicy cajun food which I do. Ingredients:
1 white onion chopped |
2 garlic cloves minced |
3 tablespoons peanut oil |
1 bell pepper diced |
2 cups chopped peeled ripe tomatoes |
1/4 teaspoon cayenne pepper |
1/4 teaspoon dried thyme |
1/4 teaspoon ground cloves |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
3 cups water |
1 pound raw ham diced |
2 cups rice |
1 pound medium shrimp shelled and deveined |
chopped fresh parsley |
Directions:
1. Saute onion and garlic in oil in a large skillet for 5 minutes. 2. Add bell pepper, tomatoes, cayenne, thyme, cloves, salt, pepper and water. 3. Bring to a boil and add ham and rice. 4. Cover then lower heat to simmer and cook for 20 minutes. 5. Place shrimp on top then cover and cook another 10 minutes. 6. Serve garnished with chopped parsley. |
