The hubbie makes these and they are sooooo good. You can substitute olive oil for the butter and they'll be vegan. Ingredients:
1 bunch collard greens (big bunch) |
3 tablespoons butter |
2 garlic cloves, minced |
1 teaspoon italian seasoning |
1 tablespoon sugar |
1/4 teaspoon vinegar |
1/2 teaspoon red pepper flakes |
1 (14 ounce) can stewed tomatoes |
1/4 teaspoon fresh ground pepper |
Directions:
1. Chop the collard greens, stems and all, into bite sized pieces. 2. Bring a big pot of salted water to a boil. Pour in the collards and boil for 18 to 20 minutes. 3. Meanwhile prepare the sauce. 4. Melt butter in a saucepan over medium heat. 5. Add the garlic and saute for 2 minutes. 6. Add the rest of the ingredients and bring to a simmer. 7. Once the greens are done drain them and return them to the pot. 8. Pour the sauce over them and keep warm until you're ready to serve. |
