A Christmas Holiday Tradition in the Jeffrey household. No Christmas is complete without lemon bars. Ingredients:
1 cup butter |
1/2 cup powdered sugar |
2 cups flour |
4 eggs |
2 cups sugar |
1 pinch salt |
2 teaspoons lemon rind |
6 teaspoons fresh lemon juice |
1 teaspoon baking powder |
Directions:
1. Preheat oven to 350 degrees. This recipe works well doubled. 2. For the crust, mix butter, powdered sugar, and flour, then firmly press into the bottom of a 9 x 13 pan. 3. Bake at 350 degrees for 20 minutes. 4. For the top layer, beat the eggs, sugar, salt, lemon rind, lemon juice and baking powder together until frothy. Spread on the baked layer. 5. Bake the whole thing at 350 degrees for 30 minutes. 6. Lightly sprinkle powdered sugar over the whole thing. |
