2 teaspoon(s) canola oil |
1 teaspoon(s) salt |
1 teaspoon(s) black pepper |
4 large fresh tomatoes |
1 can(s) 28 oz diced tomatoes in juice |
1 tablespoon(s) dry basil |
2 tablespoon(s) fresh basil |
1 cup(s) heavy cream |
1 cup(s) water |
1/2 cup(s) romano cheese grated |
1 cup(s) parmesan cheese grated |
Directions:
1. Bob’s Tomato Basil Soup 2. Serves 6, Cook time: 30 minutes 3. 1/4 c onions, diced 4. T fresh garlic, minced 5. t canola oil 6. t salt 7. t black pepper 8. large fresh tomatoes, cored 9. can diced tomatoes in juice, 28 oz 10. T dry basil 11. T fresh basil 12. c heavy cream 13. c water 14. 1/2 c Romano cheese, grated 15. c parmesan cheese, grated 16. In a large heavy pot, sauté the onion and garlic until translucent. Add fresh tomatoes, canned tomatoes, dry basil and water. Bring to a boil and reduce heat to simmer for 10 minutes. Add the cream, fresh basil, salt and pepper and return to a simmer for 10 minutes. Shut off the heat and stir in cheeses. If a smooth soup is desired, puree with a stick blender. |
