This delicious stew is so filling. Easy & inexpensive to prepare, it only needs some crusty bread to soak up the juice Ingredients:
6 tblsp olive oil |
2 large onions - sliced |
1 red bell pepper - seeded & sliced |
4 oz fresh mushroms - sliced |
16 oz canned tomatoes |
pinch salt & pepper |
pinch dried thyme |
1 1/2 cups water or fish stock |
2 lb fish fillets - any white firm fleshed fish will work |
1/2 cup white wine |
2 tblsp chopped parsley |
Directions:
1. Heat the oil in a large deep skillet & add the onions 2. Cook until just beginning to look transluscent 3. Add the pepper & cook until the vegetables are softened 4. Add the mushrooms & the tomatoes & bring mixture to the boil 5. Add thyme, salt , pepper & water & simmer for about 30 mins 6. Add the fish & wine & cook until the fish flakes easily, about 15 mins 7. Stir in the parsley |
