Blushing Turkey and Cheese Sandwiches |

Ingredients:
4 french rolls, crusty |
4 ounces goat cheese |
1 (15 ounce) can bing cherries (pitted dark sweet) |
1/4 cup low-fat mayonnaise |
1 tablespoon dijon mustard |
1 tablespoon fresh basil, chopped |
8 ounces deli turkey, thinly sliced |
2 cups baby spinach leaves |
Directions:
1. Slice rolls in half horizontally, leaving 1 long side attached. 2. Evenly divide the cheese among the 4 cut bottom halves of each roll & spread evenly. 3. In a bowl, combine chopped cherries, mayonnaise, mustard & basil, mixing well. 4. Spread 3 to 4 tablespoons of this cherry mixture on the cut side of each top half. 5. For each sandwich divide the turkey among the 4 sandwiches, layering it onto the cheese. 6. Divide the spinach leaves among the 4 sandwiches. 7. Serve immediately or keep refrigerated until ready to serve. |
