Adapted from the December 2007 issue of Cottage Living. If you can't get your hands on a small cabbage, use 1/2 a large one - you want the weight to be about 3/4 lb. Ingredients:
1 small red cabbage (3/4 lb), shredded |
2 plum tomatoes, seeded and diced |
1 1/2 tbsp cold vegetable broth or water |
1 lemon, juice and zest |
1/4 teaspoon garlic powder |
1/2 teaspoon salt |
ground pepper, to taste |
Directions:
1. Combine all ingredients in a serving bowl, tossing well. 2. Let sit in the fridge 8 hours before serving. |
