My mom was playing in the kitchen when Erin was about one, and came up with this. We let her have a little taste and she said UMMMM Ingredients:
6 apples, sliced, cored and peeled |
3/4 cup water |
1/2 cup sugar |
1/4 cup apple blossom honey (or which ever you have, but if you can get apple blossom, it has a wonderful flavor!) |
1 tsp nutmeg (or better yet, a couple passes of a whole nutmeg over a micro plane) |
1 pt blueberries |
2 tbs corn starch dissolved in 1/4 cup cold water |
1 tbs fresh lemon juice |
Directions:
1. In a sauce pan heat apples, sugar, honey and water until it boils. Add nutmeg and blueberries,boil 3-5 min or until apples turn blueberry color. 2. pour corn starch mixture in and cook until thickened. 3. Add the lemon and stir well. |
