Another recipe from Cooking Light. Ingredients:
2 cups flour |
1/3 cup sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/4 cup orange juice |
2 tablespoons vegetable oil |
1 teaspoon vanilla extract |
1 (8 ounce) carton low-fat vanilla yogurt |
1 large egg, lightly beaten |
1 cup fresh blueberries or 1 cup frozen blueberries, thawed |
cooking spray |
1 tablespoon sugar |
Directions:
1. Preheat oven to 400*F. 2. Combine flour, 1/3 cup sugar, baking powder, soda, and salt in a large bowl. 3. Make a well in the center. 4. Combine orange juice, oil, vanilla, yogurt and egg; add to dry ingredients, stirring just until moist. 5. Gently fold in blueberries. 6. Spoon batter into 12 muffin cups that have been coated with cooking spray. 7. Sprinkle tops with 1 TBS sugar. 8. Bake for 18 minutes or until a wooden pick inserted in center comes out clean. 9. Remove from pans and place on wire rack. |
