Blueberry muffins using whole wheat flour and lots of berries Ingredients:
6 tablespoons butter |
3 cups wheat flour |
3 teaspoons baking powder |
1 teaspoon salt |
1 cup sugar |
1 egg |
2 egg yolks |
1 teaspoon vanilla |
1 cup 2% low-fat milk |
2 cups blueberries |
Directions:
1. Mix Dry. 2. Cream butter and sugar. 3. Add egg and vanilla to sugar mixture. 4. Add milk and dry mixture to wet ingrediuents, alternating. 5. Fold in blueberries. 6. Bake 45 minutes for Jumbo muffins at 375. 7. Bake 30 minutes for regular muffins at 375. |
