These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top! Ingredients:
1 cup blueberries |
3 teaspoons baking powder |
2 eggs, separated |
1 tablespoon sugar |
2 cups sifted flour |
1 1/2 cups milk |
1/2 teaspoon salt |
1/4 cup melted butter |
Directions:
1. Preheat the waffle iron. 2. Beat egg whites til stiff and set aside. 3. Sift together dry ingredients. 4. Slowly stir in milk, beaten egg yolks and melted butter. 5. Fold in blueberries. 6. Fold in egg whites which were stiffly beaten. 7. Bake in hot waffle iron. |
