Blueberry Streusel Muffins |

Nothing better than homemade blueberry muffins! Ingredients:
1/3 cup sugar |
1/4 cup butter, softened |
1 egg, beaten |
2 1/3 cups flour |
4 teaspoons baking powder |
1/2 teaspoon salt |
1 cup milk |
1 teaspoon vanilla |
1 1/2 cups blueberries, rinsed |
1/2 cup sugar |
1/3 cup flour |
1/2 teaspoon cinnamon |
1/4 cup butter |
Directions:
1. In a bowl cream sugar and butter. 2. Add egg and milk. 3. In a bowl, add flour, baking powder and salt. 4. Add to cream mixture. 5. Stir in vanilla. 6. Fold in blueberries. 7. Fill muffin cups 2/3 full. 8. FOR STREUSEL: Add sugar, flour and cinnamon. 9. Cut in butter until crumbly. 10. Sprinkle over muffins. 11. Bake at 375 for 25-30 minutes. |
