dressing |
1 tbl grated fresh ginger |
1/2 tsp kosher salt |
1/4 tsp freshly grond black pepper |
1 tbl rice vinegar |
2 tbl fresh lemon juice |
1.3 c extra virgin olive oil |
2 tbl reduced fat mayo |
salad |
3 1/2 ounces of baby spinach leaves |
1 pint fresh blueberries |
1 1/2 c seedless watermelon, chopped into 1/2 pieces |
1 yellow bell pepper, chopped |
1 bunch radishes finely chopped |
1/2 c finely chopped chives |
Directions:
1. Prepare dressing 2. Add all dressing ingredients to a blender 3. Mix on medium speed until smooth; set aside 4. Place spinach in a large salad bowl 5. Top with blueberries, watermelon, yellow pepper and radishes 6. Drizzle dressing over salad, sprinkle with chives, toss gently and serve immediately |
