Blueberry Spinach Salad With Ginger Dressing

Ingredients:
dressing
1 tbl grated fresh ginger
1/2 tsp kosher salt
1/4 tsp freshly grond black pepper
1 tbl rice vinegar
2 tbl fresh lemon juice
1.3 c extra virgin olive oil
2 tbl reduced fat mayo
salad
3 1/2 ounces of baby spinach leaves
1 pint fresh blueberries
1 1/2 c seedless watermelon, chopped into 1/2 pieces
1 yellow bell pepper, chopped
1 bunch radishes finely chopped
1/2 c finely chopped chives
Directions:
1. Prepare dressing
2. Add all dressing ingredients to a blender
3. Mix on medium speed until smooth; set aside
4. Place spinach in a large salad bowl
5. Top with blueberries, watermelon, yellow pepper and radishes
6. Drizzle dressing over salad, sprinkle with chives, toss gently and serve immediately
