Blueberry Spinach Salad With Cracked Pepper Vinaigrette |

This is a great, light spinach and fruit combination that is easy to make and looks great too. Like any salad, it's best when you tweak-it to include your own favorite topping... this combination is one of my favorites. Ingredients:
4 cups baby spinach |
1 (8 ounce) package fresh blueberries |
4 tablespoons balsamic vinaigrette dressing |
1/2 teaspoon cracked peppercorn |
1/4 cup sesame seeds, unsalted |
1/4 cup feta cheese, crumbled |
Directions:
1. Wash the spinach and blueberries with cool water in a colander. Drain, and place into large salad bowl, along with any optional ingredients. 2. In a small bowl, mix the balsamic vinaigrette dressing with the cracked peppercorn. Either allow guests to pour their own dressing, or toss together with salad shortly before serving. |
