Blueberry Sour Cream Waffles |

These are very light and fluffy and the combination of sour cream and blueberries makes it elegant in my book. Enjoy Ingredients:
3 large eggs separated |
3/4 cup milk |
8 tablespoons unsalted butter melted |
3/4 cup sour cream |
1-1/2 cups all purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 tablespoon sugar |
1/2 cup fresh blueberries plus more for garnish |
confectioner's sugar for dusting |
maple syrup for serving |
Directions:
1. Preheat a waffle maker according to the manufacturer's instructions. 2. In a large mixing bowl using a whisk beat the egg yolks. 3. Beat in milk, butter and sour cream. 4. Over a sheet of waxed paper sift together the flour, baking powder, baking soda and sugar. 5. Add dry ingredients to wet ingredients and beat until smooth. 6. Stir in the 1/2 cup blueberries. 7. In another large bowl beat the egg whites until stiff peaks form. 8. Using a rubber spatula fold 1/2 cup of the egg whites into batter then carefully fold in whites. 9. Cook the waffles according to the manufacturer's instructions. 10. Garnish with the remaining blueberries. 11. Dust with the confectioners' sugar and serve hot with maple syrup. |
