BLUEBERRY RUFFLE PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pederson Estate in Duncanville, Texas in 1982.
Ingredients:
1 graham cracker pie shell
filling
1 tablespoon unflavored gelatin
1/4 cup cold water
2 cups fresh blueberries
1 cup granulated sugar
1/8 teaspoon salt
1 egg white
1 tablespoon lemon juice
extra berries for garnish
Directions:
1. Soften gelatin in cold water then dissolve over hot water.
2. Place berries, sugar, salt, egg white and lemon juice in large bowl of mixer.
3. Whip until mixture holds a peak then whip in gelatin mixture and pile in pastry shell.
4. Garnish with whipped cream and berries then chill thoroughly.
