BLUEBERRY RUFFLE PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pederson Estate in Duncanville, Texas in 1982. Ingredients:
1 graham cracker pie shell |
filling |
1 tablespoon unflavored gelatin |
1/4 cup cold water |
2 cups fresh blueberries |
1 cup granulated sugar |
1/8 teaspoon salt |
1 egg white |
1 tablespoon lemon juice |
extra berries for garnish |
Directions:
1. Soften gelatin in cold water then dissolve over hot water. 2. Place berries, sugar, salt, egg white and lemon juice in large bowl of mixer. 3. Whip until mixture holds a peak then whip in gelatin mixture and pile in pastry shell. 4. Garnish with whipped cream and berries then chill thoroughly. |
