Award winning sweet bread recipe.The twist is cruhed pineapple and coconut. Ingredients:
2/3c butter,softened |
11/4c sugar blend for baking |
2 eggs |
4 egg whites |
11/2tsp lemon juice |
3c all purpose flour |
33/4tsp baking powder |
1/2tsp salt |
1/2c fat free milk |
2c fresh or frozen blueberries |
1c canned unsweetened crushed pineapple,drained |
1/2c chopped pecans or walnuts |
1/2c flaked coconut |
Directions:
1. In a large mixing bowl,cream butter and sugar blend. Add the eggs,egg whites and lemon juice;mix well. Combine the flour,baking powder and salt;add to creamed mixture alternately with milk. Fold in the blueberries,pineapple,pecans and coconut 2. Transfer to 2 8x4x2 loaf pans coated with cooking spray. Bake at 350 degrees for 50-60 mins. or till toothpick inserted in center comes out clean. Coo for 10 mins before removing from pans to wire racks. |
