An easy, recipe using ingredients that I normally have on hand with the exception of the blueberries! Ingredients:
1 3/4 cups all-purpose flour |
1 cup blueberries |
1/4 cup yellow cornmeal |
2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup sugar |
2 large eggs |
1/2 cup milk |
1/3 cup butter, melted |
3 tablespoons lemon juice |
Directions:
1. Heat oven to 375°F 2. Coat bottom and halfway up sides of an 8 1/2 x 4 1/2 inches loaf pan with nonstick spray. 3. Place flour in medium bowl. Remove 1 Tbsp flour and toss with blueberries in a small bowl. To remaining flour, add yellow cornmeal, baking powder and salt, mix well. 4. In another medium bowl, whisk sugar with eggs, milk, melted butter and lemon juice. 5. Stir wet ingredients into dry ingredients until just blended; fold in blueberries. Pour batter into prepared pan. Bake 45 minutes or until wooden toothpick inserted in center comes out clean. 6. Cool bread in pan for 5 minutes, remove and cool completely. |
