2 1/4 lbs pork roast |
1 onion, sliced |
4 garlic cloves |
1 cup blueberries |
1/3 cup chili sauce |
1/4 cup red wine vinegar |
1 tablespoon chipotle chili pepper flakes |
salt |
fresh ground black pepper |
sliced romaine lettuce hearts (salad ingredients start here) |
cherry tomatoes |
cucumber |
sliced carrot |
red bell pepper |
diced avocado |
lemon juice |
sausage stick |
Directions:
1. Put blueberry pulled pork ingridients into 4quart slow cooker. Low for 8-10 hours. Remove shred add back to slow cooker and mash.toss to coat in sauce. 2. Salad slice and dice veggies.cut sausage.some lemon juice on diced avacado(keep from turning brown) fry onion. Use a light dressing. Mix veggies and sausage. Put pulled pork and onions on top. 3. Serve. |
