Made with fresh or frozen berries, this is a hit anytime of the year! Serve with some whipped creasm or a scoop of ice cream Ingredients:
2 cup fresh or frozen blueberries |
1 teaspoon ground cinnamon |
1 teaspoon lemon juice |
1 cup all-purpose flour |
3/4 cup sugar |
1 teaspoon baking powder |
1/2 cup milk |
3 tablespoon butter or margarine -- melted |
3/4 cup sugar |
1 tablespoon cornstarch |
1 cup boiling water |
Directions:
1. Toss the blueberries with cinnamon and lemon juice; place in a greased 8 square baking dish. 2. In a bowl, combine flour, sugar and baking powder; 3. stir in milk and butter. 4. Spoon over berries. 5. Combine sugar and cornstarch;sprinkle over batter. 6. Slowly pour boiling water over all. 7. Bake at 350F for 45-50 minutes or until the cake tests done. |
