Blueberry Pinwheels With Cream Cheese Glaze |

I decided to try to combine a no rise cinnamon roll method with a blueberry filling to create an easy new pastry. The lemon juice in the glaze adds a nice flavor. Ingredients:

2 1/2t dry yeast(1 packet) |
3 cups flour |
3t butter melted but cooled |
1t salt |
1/4 granulated sugar |
1 cup buttermilk, milk or water, slightly warmed(110 degrees) |
blueberry filling |
1 cup fresh blueberries, rinsed |
3t orange juice |
3t powdered sugar |
1t corn starch |
1t fresh nutmeg |
1 teaspoon lemon zest |
cream cheese glaze |
6oz cream cheese, softened |
approx. 1/4 cup milk or half and half |
approx. 1/4 cup powdered sugar |
juice from 1 lemon |
Directions:
1. For Dough: 2. Toss all dry ingredients in medium bowl, to combine. 3. Add butter and water and mix with hands, or in a mixer with a dough hook, until combined and dough becomes workable. (about 5-7 minutes) 4. Set aside to rest while preparing filling 5. Combine blueberries, orange juice, sugar and corn starch in medium sauce pan See Photo. Cook on medium heat, stirring frequently to break up berries and combine. Bring to boil and continue to cook, stirring often, until thick and bubbly. Set aside to cool slightly.(do not use until mixture is cool enough to touch :) See Photo 6. Place dough on sugared board and spread with fingers or rolling pin to achieve approx a 9X13 rectangle. See Photo 7. Spread cooled filling over dough to approx. 1/2 inch from all sides See Photo. Roll, starting from a long side, jelly roll style until reaching the other end. Press seams together to seal. Place roll in freezer for 10 minutes, if desired, to aid in cutting. See Photo 8. Cut into about 12 pieces, about 1 inch wide and place, one of the cut sides down, into greased muffin tin. See Photo 9. Bake at 350 for 12-14 minutes until just browning. 10. Let cool slightly, then remove to wire rack. 11. Combine all glaze ingredients, adding more sugar/milk to get desired consistency and spread, drizzle or pipe glaze onto slightly warm rolls. |
