A wonderful chilled blueberry pie...serve with whipped topping. Ingredients:
baked pie shell |
1 cup water |
4 cups blueberries |
3/4 cup sugar |
3 tbsp. cornstarch-dissolved |
1 tbsp. lemon juice |
Directions:
1. Boil 1 cup of blueberries with 1 cup water about a minute. 2. Add 3/4 cup sugar, 3 tbsp. cornstarch and 1 tbsp. lemon juice. 3. Boil that another minute or so till it starts to thicken up. 4. Take it off the heat and fold in 3 cups of blueberries, then pour into pie shell. 5. Chill and eat! |
