For the Blueberry lovers. You judge on cook time. Ingredients:
1 9 inch baked pie shell |
combine |
3/4 c. sugar |
2 1/2 tbsps. corn starch |
1/4 tbsp. salt |
blend in |
2/3 c. water |
1 c. buleberries |
Directions:
1. Bring to a boil and cook until thick, stirring. 2. Stir in : 2 Tablespoons butter, 1 1/2 Tablespoons lemon juice. 3. Cool. 4. Fold in : 2 cups blueberries and chill about 1 hour. 5. Beat: 1 cup whipping cream, 2 Tablespoons confectioners sugar, 1/2 teaspoon vanilla (can use Dream Whip instead with 1 Tablespoon sugar added). 6. Spread about 1/8 of this mixture in bottom of crust before adding blueberry mixture. 7. Top with remaining whipped cream. 8. May be made night before. |
