Blueberry Pancake Cookies |

This sounds like a light cookie....although I have not tried it yet. If you do, please let me know what you think. Ingredients:
1/4 cup butter, softened |
2/3 cup sugar |
1 large egg |
1 1/2 cups pancake mix |
1/2 cup pecans, chopped |
1 cup fresh blueberries or 1 cup frozen blueberries |
Directions:
1. Preheat oven to 350ºF. 2. Cream butter and sugar together in a large mixing bowl. 3. Beat in egg, mixing well. 4. Stir in pancake mix and pecans. 5. Fold in blueberries. 6. Drop by spoonfuls onto a cookie sheet. 7. Bake for 12 minute. 8. Cool on wire racks. |
