I used to make these muffins when I cooked at a summer camp and the kids loved them. Recipe from Camp Lutherwood. Ingredients:
1 cup oil |
1 cup orange juice |
2 whole eggs |
1 cup oatmeal |
1 cup sugar |
3 cups flour; all-purpose |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
1 teaspoon salt |
1 1/2 cups blueberries |
cinnamon sugar |
Directions:
1. Preheat oven to 400ยบ. 2. Spray muffin pans with non-stick spray. 3. Combine liquid ingredients in a small bowl. 4. Mix dry ingredients in a large bowl, then stir in liquids until blended. 5. Fold in fresh blueberries. 6. Scoop batter into prepared pans, sprinkle tops with cinnamon sugar. 7. Bake for 25-30 minutes or until done. 8. Turn muffins out onto rack. 9. Serve warm. |
