Blueberry Oatmeal Squares |

Delightful combination of blueberries and rolled oats make a wonderful square. Taken from a magazine I read on my way to work. Ingredients:
1 1/4 cups all-purpose flour |
2 1/2 cups rolled oats (not instant) |
1 tablespoon grated orange rind |
1 cup brown sugar |
1/4 teaspoon salt |
1 cup cold butter, cubed |
3 cups fresh blueberries, this is the filling |
1/2 cup sugar |
1/3 cup orange juice |
4 teaspoons cornstarch |
Directions:
1. Filling: In saucepan bring blueberries, sugar and orange juice to boil; reduce the heat and simmer until tender, about 10 minutes. 2. Whisk cornstarch with 2 tbsp water and whisk into blueberries and boil, stirring until thickened, about 1 minute. 3. Place plastic wrap on the surface of berries and refrigerate until cooled, about 1 hour. 4. In large bowl whisk together oats, flour, orange rind and salt. 5. With pastry blender cut in cold butter until you have coarse crumbs. 6. Press 1/2 of mixture into a 8 inch square parchment lined metal cake pan. 7. Spread with blueberry filling. 8. Sprinkle with the rest of oat mixture and press lightly. 9. Bake in centre of a 350 degree oven until lightly brown, about 45 minutes. Let cool and cut into squares. 10. Enjoy. 11. Time does not include the 1 hour of cooling the blueberry filling. |
