Got this one from my mom. I haven't tried it yet but will this summer. From Gooseberry Patch Hometown Favorites. Ingredients:
1 1/3 cups all-purpose flour |
3/4 cup quick-cooking oats, uncooked |
2 teaspoons baking powder |
1/4 teaspoon salt |
1 egg |
3/4 cup sugar |
3/4 cup milk, plus |
3 teaspoons milk, divided |
1/4 cup oil |
1 cup blueberries |
1/2 cup powdered sugar |
1/2 teaspoon almond extract |
Directions:
1. Add the flour, oats, baking powder, salt, egg, sugar, 3/4 cup milk, and oil to a mixing bowl; stir to mix. 2. Fold in the blueberries. 3. Spread batter into lightly greased 8x8 inch baking pan. 4. Bake in a 400° oven for 20-25 minutes or until pick comes out clean. 5. In a small bowl, mix together the powdered sugar, almond extract, and 3 teaspoons milk. 6. Pour/drizzle over warm cake; serve. |
