This is from a local 4-H Cookbook. It was shared by Ruth Rizzo of Clayton, NY. I added my own healthy touches, of course. Prep time includes 20 minutes sitting time. Ingredients:
2 cups flour |
1/4 teaspoon salt |
3 teaspoons baking powder |
1 cup sugar |
1 cup blueberries |
1/2 cup chopped nuts |
2 eggs, well beaten or 1/2 cup egg beaters egg substitute |
1 cup milk or 1 cup soymilk |
3 tablespoons canola oil |
Directions:
1. Sift together the flour, salt, baking powder, and sugar. Add berries and the nuts. 2. Combine the eggs, milk, and oil; stir into flour mixture until just moistened. 3. Pour into a wax paper lined 9x5-inch loaf pan, or one sprayed with non-stick spray. 4. Let stand 20 minutes. 5. Preheat oven to 350; bake one hour or until done. |
