Healthy muffin made with whole wheat flour, wheat germ, olive oil & fresh fruit. Great way to start the morning. Ingredients:
3/4 cup whole wheat flour |
3/4 cup all-purpose flour |
1/2 cup wheat germ |
2 teaspoons baking powder |
1/4 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/2 cup brown sugar |
3/4 cup milk |
1/4 cup olive oil |
2 eggs, lightly beaten |
1 teaspoon vanilla extract |
1 1/2 cups fresh blueberries |
3/4 cup nectarine, chopped |
1 tablespoon wheat germ |
1 tablespoon brown sugar |
2 tablespoons rolled oats |
Directions:
1. Preheat oven to 375. 2. Spray 12 cup muffin tin with cooking spray. 3. Mix together dry ingredients in large bowl. 4. Mix together wet ingredients in a separate bowl. 5. Add wet ingredients to dry and mix until just combined. 6. Stir in fruit. 7. Pour into prepared muffin tins and bake for 18-20 or until toothpick comes out clean. |
