Blueberry Muffins With Lemon Sugar Topping

This is a quick and easy favorite with a touch of lemon-and-sugar topping. From a Canadian Living magazine from the 80's, featuring blueberry recipes from Quebec. A cake-like muffin, with a delicate texture . Bursting with blueberry goodness, the zing of the lemon sugar takes them over the top.
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup sugar
2 1/2 tsp baking powder
1/4 tsp salt
1 egg
3/4 cup milk
1/3 cup melted butter
1 cup blueberries ( fresh or frozen)
topping
1 tbsp grated lemon rind (yellow part only)
2 tbsp sugar
Directions:
1. Grease 12 medium muffin tins or line with paper baking cups.
2. Preheat oven to 400F
3. In mixing bowl, sift or mix dry ingredients together.
4. In medium bowl, beat egg; add milk and melted butter.
5. Add liquid to dry ingredients all at once, stirring til just moistened.
6. Gently stir in blueberries.
7. Spoon into muffin tins filling about 3/4 full.
8. Combine lemon zest with sugar and sprinkle over tops of batter.
9. Bake 400F for 20 minutes or until tops spring back when lightly touched.
10. Remove to wire rack to cool
