Blueberries! A wounderful berry loved by all. These are great and fast to make. Ingredients:

1 3/4 cups all-purpose flour |
1/3 cup sugar |
2 1/2 tsp. baking powder |
1/2 tsp. salt |
1cup fresh or frozen blueberries thawed |
3/4 cup milk |
1 egg |
1/3 cup melted margarine or butter |
Directions:
1. 1)In a bowl, combine flour, sugar, baking powder and salt. Add blueberries. 2. 2)Add milk, melted margarine and egg. Mix until dry ingredients are just moistened. Do not over beat. 3. 3)Spoon batter into paper-lined micro-safe baking or cupcake pan. Do not fill more than 2/3 up. 4. 4)Microwave at MEDIUM-HIGH power for 3 minutes. Let rest for 3 minutes. 5. 5)Microwave at HIGH power for another 2 ot 3 minutes or until muffins are done. They will still be a little soft in the center. Let them rest in pan for a couple of minutes. 6. 6)Serve them warm with margarine. |
