I made a few changes to a recipe of my mothers to make it a little more healthier Ingredients:
1/2 cup all-purpose flour |
1/4 cup sugar |
1 1/2 teaspoons baking powder |
1/4 teaspoon salt |
2 egg whites |
1/3 cup orange juice |
2 tablespoons applesauce (unflavored) |
1 teaspoon vanilla |
1 cup blueberries (fresh or frozen) |
Directions:
1. Mix together flour, sugar, baking powder and salt in a medium-size bowl. 2. In a small bowl beat egg whites, orange juice, oil and vanilla 3. Add to dry ingredients 4. Fold in blueberries. 5. Fill muffin cups (sprayed with nonstick cooking spray) about half full. 6. Bake at 400 degrees for 17 minutes or until golden brown. |
