Blueberry Muffins - Fat-Free, Sugar-Free, Cholesterol-Free |

This is a recipe I found on the internet and modified to be virtually free of fat, sugar and cholesterol. While these muffins are not overly sweet, they definitely satisfy! Enjoy! Ingredients:
3/4 cup all-purpose flour |
3/4 cup whole wheat flour |
1 1/2 teaspoons baking powder |
1 teaspoon baking soda |
2 egg whites |
2 tablespoons splenda granular |
2 tablespoons unsweetened applesauce |
1 cup unsweetened blueberries |
1/4 cup orange juice |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 400 degrees. 2. Spray muffin tin with cooking spray. 3. In a large bowl, combine both flours, baking powder and baking soda. Mix well. 4. In another bowl, combine remaining ingredients EXCEPT FOR THE BLUEBERRIES. Mix well. Add to dry mixture and again, mix well. 5. Add blueberries and fold in gently. 6. Divide evenly into prepared muffin cups. 7. Bake for 15 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 8. Remove muffins to a rack to cool. 9. Enjoy! |
