Made these at a local hospital. The staff loved them. Ingredients:
4 1/2 cups flour |
2 1/4 cups white sugar |
1 1/2 teaspoons salt |
2 tablespoons baking powder |
1 cup vegetable oil |
3 eggs |
1 cup milk |
3 cups blueberries |
1 1/2 cups white sugar |
1 cup flour |
3/4 cup margarine, cubed |
1 1/2 teaspoons cinnamon |
Directions:
1. Preheat oven to 400°. 2. Combine 4-1/2 cups flour, 2-1/4 cups sugar, salt and baking powder. 3. Add oil, egg and milk to flour mixture. 4. Fold in blueberries. 5. Crumb topping: Mix together 1/1/2 cups sugar, 1 cup flour, 3/4 cup margarine and cinnamon. 6. Sprinkle over muffins before baking. |
