Yummy! I got this from a friend, but changed just a bit to make it healthier.
Ingredients:
1 1/2 cups flour
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup applesauce
2 egg whites
1/3 cup skim milk
1 cup blueberries (fresh or frozen, we use fresh)
Directions:
1. Preheat oven to 400°F.
2. Combine flour,sugar, salt, and baking powder.
3. Place applesauce into a 1-cup measure.
4. Add egg whites and then enough milk to fill the cup.
5. Mix this with the flour mixture.
6. Dold in blueberries.
7. Pour batter into muffin pans.
8. Bake for 20-25 minutes.
