These muffins are low in sugar and they are very healthy Ingredients:
1 cup all-purpose flour |
1 cup whole wheat flour |
1/4 cup brown sugar |
1 teaspoon ground nutmeg |
1 teaspoon ground cinnamon |
1 tablespoon baking powder |
1 teaspoon baking soda |
1 egg, whisked |
1/3 cup canola oil |
1/2 cup plain yogurt |
1/2 cup milk |
1/2 cup apple juice |
1/2 cup applesauce |
2 teaspoons lemon extract |
1 cup blueberries |
Directions:
1. In a large bowl, combine the first 7 ingredients. Set aside and preheat the oven to 400°F. 2. In a smaller bowl, whisk egg. Add the yogurt, juice,applesauce and lemon extract to the egss and mix well. 3. Add egg mixture to the dry ingredients and blend together. Gently stir in blueberries into the muffin batter,. |
